Broccoli Cheese Soup



This is one of my husband's favorite soups. We half the recipe because it is only the 2 of us eating, and we still have enough left-over for the next day. With all the cheese and butter, it may not be the healthiest soup, but it's got some vegetables in it. :)

In a large saucepan, dissolve 12 chicken boullion cubes in 3 qts water.
Add: 1 onion, finely chopped
1 cup celery, chopped
2 10 oz pkg frozen broccoli or cooked fresh
Cook the above ingredients until tender.
In a separate bowl, melt 2 1/2 cubes butter or margarine. Add 1 1/4 cups flour to the melted butter and blend until it is a smooth paste. Add to the vegetable mixture and stir.
Add 1 16 oz jar of cheese whiz and mix well.
Cook until smooth and thick.

I had some good broccoli cheese soup not too long ago and ever since then I've been wanting to get the recipe! I'm going to try that sometime this week!

This was "Yum-o"!! Thanks for posting it! It turned out really good! This is definitely a meal we'll be eating on a regular basis from now on! And it was a cinch! Those are always the best meals... easy make, easy clean-up.
