Homemade Soft Pretzels

I got this recipe from my friend Kristi. In the words of my husband "Mmmm, these taste just like the ones you buy at the mall. Not like those rock solid ones you buy frozen at the store." They were just as good the next day too.
1 pkg or 1 Tbsp. yeast
1 1/4 c. warm water
1/4 c. brown sugar, packed
1 1/2 c. bread flour
1 1/2 to 1 3/4 c. all-purpose flour
1/2 c. water
1 Tbsp. baking soda
2 Tbsp. butter
Pretzel or kosher salt
Combine yeast and 1 1/2 c. warm water and let stand for 5 minutes. Combine yeast mixture, brown sugar, and bread flour in large bowl. Stir in enough all-purpose flour to make dough soft. Turn dough onto lightly floured surface and knead until smooth (about 3 minutes). Cover and let rise 20 minutes. Cut dough into 12 pieces. Roll pieces into 15-inch ropes. Shape into pretzel. Combine 1/2 c. water and baking soda. Dip pretzels into mixture, shaking off excess water. Place on greased baking sheet. Sprinkle with salt. Bake at 475 for 6 minutes or until golden brown. Brush with butter and serve immediately. Makes 12 pretzels.
