I made this recipe a few weeks ago (from Simple & Delicious magazine) and loved it (I'm a fan of anything with avocados). It would also be good with some bacon bits. Even though this is quick and easy, it's even more so if you use store-bought guacamole instead of making your own like the recipe directs.
Ingredients:
4 whole pita breads
2 T. olive oil
1 medium ripe avocado, peeled and pitted
1 T. lemon juice
1/4 tsp. salt
1/4 tsp. garlic powder
1/8 tsp. hot pepper sauce
12 oz cooked and cubed chicken breast (about 2 breasts)
1 medium tomato, chopped
2 cups (8 oz) shredded cheese
Brush 1 side of each pita bread with oil. Place on ungreased baking sheet. Bake at 350 for 12-15 minutes or until browned and crisp.
Meanwhile, in a small bowl, mash the avocado with lemon juice, salt, garlic powder, and hot pepper sauce. Spread over pitas. Layer with chicken, tomato and cheese. Bake for 5-6 minutes or until cheese is melted. Makes 4 servings.

These were good! We used tortillas because that is what we had on hand, and they turned out tasty. Thanks for the recipe.
